Festive Chicken Breasts

  • 4 - 6 boneless, skinless chicken breasts
  • 4 ounces of:
    Red Creek All-Purpose Marinade
  • 4 ounces of pineapple juice
  • 4 - 6 pineapple slices
  • 4 - 6 maraschino cherries
  • Paprika
  • Butter-flavored cooking spray, shortening or oil
In large bowl, mix the Red Creek Marinade and pineapple juice together, add chicken breasts and marinate for one hour in refrigerator. Remove chicken breasts from marinade mixture, return marinade mixture to refrigerator, sprinkle chicken breasts lightly with paprika, and pan grill over moderate heat in a large, heavy non-stick skillet which has been generously sprayed with butter-flavored cooking spray or prepared with a small amount of butter-flavored oil or shortening. As chicken breasts begin to turn white and have browned on one side, turn and begin browning second side. Then, add enough pineapple-marinade mixture to cover bottom of pan, top each chicken breast with one pineapple slice and a maraschino cherry. Cover pan, lower heat and continue cooking until most of the marinade mixture is absorbed and chicken breasts are done. Delicious served over brown rice!
