- Game tenderloin
- 1 ounce per pound of:
Red Creek All-Purpose Marinade or
Red Creek Jerky Marinade or
Red Creek Bold & Spicy All Purpose Marinade
- Sliced bacon or vegetable oil
- Butter or margarine
Marinate tenderloin in Red Creek for about two hours; a little longer if "gamey". Remove from marinade and wrap with bacon or brush with vegetable oil. Place tenderloin on rack in roasting pan with just enough water to catch drippings and create steam. Add 4-6 Tbsp. fresh marinade to water. Place in preheated 500 degree oven. After 10 minutes, reduce heat to 350 degrees and roast until done.
Variation:
Slice tenderloin in 1" slices. Marinate one hour. Remove from marinade and wrap with bacon slice secured by toothpick. Barbeque on pit, pan broil or oven broil until done. Baste with mixture of melted butter or margarine and marinade as necessary.
