Labor Day Grilled Dove

  • Yours and several buddies' limit of dove
  • 1 ounce per pound of:
    Red Creek All-Purpose Marinade or
    Red Creek Jerky Marinade or
    Red Creek Bold & Spicy All Purpose Marinade
  • Thinly sliced bacon - 1/2 slice per dove
  • Round, wooden toothpicks (*Soaked in water overnight)
  • Optional:
    Jalapeno peppers
    Water chestnuts
    Chopped onion
Marinate dove in chosen Red Creek Marinade for a couple of hours then remove from marinade and stuff with half a seeded jalapeno pepper, chopped onion or water chestnuts (or any combination) if desired. Wrap each dove in bacon, secure with a toothpick and grill over moderate charcoal, turning often and basting occasionally with remaining marinade until done (20-30 minutes). Roasting or baking birds in moderate oven will get the job done, but you won't have near as much fun.
